Nordic Ambience

Icelandic chef Vilhjalmur Sigurdarson and his spouse, Joke Michiel, moved their restaurant ‘Souvenir’ from Ypres to a former butcher’s shop in Ghent’s city centre. After the move, Sigurdarson’s focus shifted more than ever to fish and vegetables. The result is an uncompromising, robust kitchen with a clear Nordic touch.

Some authentic elements – such as the ceilings and mantelpieces – of the butcher’s shop have been retained. The Scandinavian influence was also continued in the light-hearted interior. To increase the spaciousness in the narrow building, natural light is drawn in through a glass roof. In the ‘Dining Room’ slanted, graphic areas of color enhance the sense of perspective.

The bar, on the other hand, exudes pure luxury through the pink natural stone top with a playful upstand in high-blue MDF, while the subway tiles mischievously wink at the authenticity of the building.
