After a successful collaboration in 2015, Studio Bjorn Verlinde was once again entrusted with
designing the furniture for the second Carcasse by Dierendonck in Knokke. In close partnership
with Hendrik Dierendonck and Timon Michiels, SBV created bespoke furniture that embodies
Carcasse’s core values: craftsmanship, authenticity, and functionality.
The interior exudes pure craftsmanship, with tables made of solid beech – the wood of traditional
butcher’s blocks – and seating upholstered in natural leather for maximum comfort. A unique detail:
Clem Vanhee’s knives feature a slanted handle, seamlessly integrated into the tables. The refined
lighting concept ensures the perfect ambiance day and night, enhancing both the dining
experience and the presentation of the dishes.
